A healthy immune system needs Vitamin D, in particular Vitamin D3. Your body makes this from sunlight on your skin. At this time of year sunlight can be tricky to find … and so often we are wrapped up snug as a bug in a rug. However it was lovely to see these snowdrops peeking out in the sunshine whilst on one of my walks. They inspired me to create a recipe making the most of the natural Vitamin D we find in some foods. Christina’s Surprising Scrambled Eggs with Smoked Salmon
Both egg yolks and oily fish are good food sources of Vitamin D3.
Please note – my recipes are not exact, I am a practical cook! These are the quantities for one, multiply up accordingly.
- Have to hand some chopped smoked salmon.
- To a small pan over a low heat add a sloosh of extra-virgin olive oil.
- Add a finely chopped spring onion (I like the large salad ones), an inch or two of garlic purèe (or easy finely chopped garlic of your choice) and half a teaspoon or so of wholegrain mustard. For extra surprise, add a smidgeon of chilli paste
- Cook gently for about 5 minutes until softened and cooking nicely.
- Add one extra-large organic egg, beaten
- Cook gently, stirring often, until the egg begins to thicken.
- Add the chopped smoked salmon and keep stirring so that the fish cooks lightly, until the egg is cooked to your preferred done-ness.
- Add a little chopped Roquefort cheese and stir it in so that it melts.
- Or a drizzle of Tahini, for an extra dose of healthy fats and magnesium and calcium, which also support the body’s production of Vitamin D
- Serve as it is, or on a slice of toast of your preferred bread. Rye bread is great!
